Healthy Peanut Butter Cookies
Cream the following with electric
mixer or food processor:
1/2 cup soft butter
1/2 cup all natural peanut butter
1 cup erythritol sugar
1 egg
1 tablespoon molasses
Add and mix by hand:
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1/2 cup dry milk powder
2 tablespoons water
3/4 cup whole wheat pastry flour
3/4 cup uncooked oats
Mix well
Drop on ungreased cookie sheet &
flatten with fork if desired.
Bake about 15 minutes at 350 degrees
Remove from pan while still soft
In these cookies, the egg, peanut butter,
milk and whole wheat flour and powdered milk
provide healthy protein. A tall glass of milk
completes the amount for a healthy meal with
a few of these cookies.
Obviously, you will not eat this kind of
meal three times a day, but it is a
satisfying and healthy change once in
a while.
