Guilt Free Chocolate Cake

Guilt Free Chocolate Cake
Among all my friends I cannot think of
anyone who does not like Chocolate Cake.
The problem is that the amount of sugar
in cake is quite scary.
At least it was until the discovery of
Erythritol – the almost no calorie sugar that
does not raise blood sugar or blood pressure
or cause gas or bloating.
The best part of it is that it tastes and bakes
just like regular table sugar but without all
the terrible side effects of regular sugar.
This is a very special moist chocolate cake
that no one will guess was not made with
regular sugar.
In mixing bowl . . .
Cream:
1/2 cup soft butter
2 cups erythritol
2 teaspoons molasses
Beat together and add:
1 cup cottage cheese
3 eggs
Add: 2 teaspoons vanilla
1/4 teaspoon rum flavoring
1/2 cup cocoa
1 teaspooon apple cider vinegar
1 1/2 tsp. baking soda
1 teaspoon baking powder
2 cups unbleached flour
3/4 cup milk
Pour into 2 greased 9 inch layer pans
Bake at 350 degrees for 20-25 min.
Or in 1- 9×12 inch pyrex casserole dish
For 25-30 minutes until top springs back
when lightly touched.
Cool and frost with :
My Chocolate Buttercream Frosting
In large pyrex measuring cup mix:
4 tablespoons cornstarch
1 1/3 cups milk
1/4 cup butter
1/3 cup cocoa
f.g. sea salt
2/3 cup erythritol sugar
Microwave at 100% power for 3-5 minutes
until thick.
Add 2 teaspoons vanilla
Beat well until cool.
Spread on cake
