Quick & Easy Chocolate Cream Pie
Crust:
In 9” glass pie plate:
Melt: 3 tablespoons Butter in
Microwave at 70% power 1 to 1 1/2 minutes
Add: 3/4 cup grape nuts or 4 double graham crackers
( crushed fine in food processor)
Stir in: 1/2 teaspoon Sweet ‘n Low
Microwave at 70% power for 2 to 3 minutes, til set – Cool
Chocolate Filling:
In large glass measuring cup:
Combine:
2 cups non- fat milk
2/3 cup powdered milk
2 eggs
4 tablespoons unsweetened cocoa powder
2 1/2 tablespoons cornstarch
1/4 teaspoon sea salt
Beat well with rotary beater
Microwave at 70% power for 4 minutes
Stir and continue cooking for 3 to 4 minutes until thick
Add: 1 teaspoon vanilla
1/2 cup erythritol sugar
Beat until smooth.
Cool and pour into pie crust
Topping:
Beat: 1 cup heavy whipping cream until forms peaks.
Add: 2 tablespoons erythritol sugar or Truvia
1 teaspoon vanilla
Spread over filling
Makes 6 servings
