Baked Custard
This is a cool creamy one dish meal… great if you
are in a hurry or too warm or tired to cook. It can
be prepared ahead and keeps well in the refrigerator
for several days.
Baked Custard
In a 2 quart oven-safe bowl
Beat: 4 eggs
3 cups water
2 cups dry milk powder
2 tsp. vanilla
1/2 tsp. salt
1/3 cup erythritol sugar
After mixing well …
Place bowl in pan of water
Bake at 375 degrees until knife
inserted in center comes out clean.
Cool and serve plain or with 1 tsp. agave
or maple syrup or fresh fruitĀ topping each serving.
May be baked in 8 custard cups for easy
serving.
The “double milk” in this recipe, plus
the eggs, make this an extremely healthy
high protein meal.
I get the “double milk” benefit in this
recipe by adding double the normal amount
of milk powder to the water to make my
milk, so each serving has extra protein -
the necessary part of any meal.
If you do not have milk powder, it may be
made with 3 cups regular milk instead.
